INGREDIENTS
โข 1 package Fancy Monkey Vanilla Pudding Mix
โข 2 cups Cold pea milk (unsweetened)
โข 2 tbsp Vanilla or unflavored protein powder (optional, for extra boost)
โข 1โ2 tsp Pure vanilla extract
โข Pinch Fine sea salt
Toppings (mix and match)
โข Fresh berries,
โข Granola
โข Crushed nuts for crunch
INSTRUCTIONS
01. Whisk
Add the Fancy Monkey Vanilla Pudding Mix (and protein powder, if using) to a bowl. Pour in the cold pea milk and vanilla extract and whisk for 2 minutes until completely smooth and thickened.
02. Season
Add a pinch of salt and whisk once more. Taste and adjust โ pea milk is naturally a touch nutty, so an extra splash of vanilla rounds it out nicely.
03. Chill and serve
Pour into cups or small glasses and refrigerate at least 30 minutes for a firmer, more scoopable set, or serve immediately for a softer pudding. Top with berries, granola, or crushed nuts right before serving.
TIPS
Pea milk brings roughly 8g of protein per cup to the table โ as much as dairy milk, and far more than oat, almond, or rice milk โ so this pudding doubles as a legitimate post-workout snack, not just
dessert. It's naturally a little denser and creamier than other plant milks, which makes for an extra-rich set. Stir in a scoop of protein powder if you want to push it further, or keep it simple and let
the pea milk do the work. Keeps in the fridge for up to 3 days.
