4+ hrs (including chill)INGREDIENTS
- 2 cups ย Cold whole milk
- 1 pkg ย ย Fancy Monkey Banana Cream Pudding Mix
- 1 cup ย ย Heavy whipping cream, cold
- 1 tsp ย ย Vanilla extract
- 1 box ย ย Simple Mills Almond Flour Vanilla Cookies
- 2 Ripe bananas, sliced
INSTRUCTIONS
- Make the pudding
Whisk cold milk into the pudding mix in a bowl for 2 minutes until smooth and beginning to thicken. Refrigerate for 5 minutes while you whip the cream. - Whip the cream
Beat cold heavy cream and vanilla in a chilled bowl until stiff peaks form, about 2โ3 minutes. Fold about a third of the whipped cream into the pudding to lighten it. Reserve the rest for the top. - Layer
Cover the bottom of your trifle dish with a single layer of vanilla wafers. Add a layer of sliced bananas. Spoon half the pudding mixture over evenly. Repeat โ wafers, bananas, pudding. - Top
Spread the reserved whipped cream over the top. Finish with a few whole cookies pressed gently into the cream. - Chill
Cover and refrigerate for at least 4 hours โ overnight is better. The wafers soften into the pudding and the whole thing becomes something greater than the sum of its parts. - Serve
Scoop deep so every serving gets all the layers. Add a few fresh banana slices on top just before serving.
TIPS
Add fresh banana slices on top just before serving โ they brown quickly once exposed. For individual servings, layer in mason jars or glasses for a presentation that travels well.
