INGREDIENTS

  • 2 cups macadamia milk, cold (barista-style sets a touch richer)
  • 1 pkg Fancy Monkey Salted Caramel Pudding Mix (full package)
  • ½ tsp ground cinnamon
  • Pinch cream of tartar (optional — adds the snickerdoodle tang)
  • 1 tbsp sugar (optional, for a sweeter, more cookie-like cup)

To top

  • Whipped cream, crushed graham crackers (Annie's, or Mi-Del for GF), cinnamon sugar

INSTRUCTIONS

  1. Whisk
Add the pudding mix, cinnamon, and — if using — the cream of tartar and sugar to a medium bowl.
  2. Spoon
Spoon into 4 cups or jars. Serve right away, or chill a few minutes for a firmer set.
  3. Top
Just before serving, top with whipped cream, crushed grahams, and a shake of cinnamon sugar.

TIPS

Add the toppings right before serving so the grahams stay crunchy. Want it more pronounced? Bump the cinnamon to 1 tsp, or crumble Simple Mills snickerdoodle cookies on top instead of grahams. For an autumn version, add a pinch of nutmeg and clove; for a richer, creamier set, swap the oat milk for whole milk. Keeps covered in the fridge up to 3 days.

FAQ

How do you make snickerdoodle pudding?

Whisk Salted Caramel pudding mix and cinnamon into cold oat milk for 2 full minutes until thick, then add an optional pinch of cream of tartar for the snickerdoodle tang. No cooking.

Why add cream of tartar?

Cream of tartar gives the subtle tang that defines a real snickerdoodle cookie. It’s optional, but it makes the flavor noticeably more authentic.

Is it dairy-free and vegan?

Yes — made with oat milk it’s dairy-free, and it’s vegan if you skip the whipped cream topping. Any plant or dairy milk works.

How do you make it taste more like the cookie?

Bump the cinnamon to 1 teaspoon, stir in the optional tablespoon of sugar for a sweeter cup, or crumble snickerdoodle cookies on top instead of grahams.
