Salted Caramel Spice Cake Mix Cookies

Soft, chewy and cozy, like a spiced caramel latte in cookie form.

Fancy Monkey Salted Caramel brings a buttery caramel note and keeps the cookies soft and
chewy for days. The warm spices turn a simple box of yellow cake mix into the coziest cookie of
fall.
Why pudding mix in cookies? Instant pudding and dessert mix holds onto moisture in the
dough, so the cookies bake up thick, soft and chewy instead of thin and crisp. Half a pouch is all
you need, so one pouch makes two batches.

INGREDIENTS

1 box yellow cake mix about 16 oz

1/3 cup (or about 1/2 pouch) salted caramel Fancy Monkey

2 whole eggs

1/2 cup neutral oil

1 tsp vanilla extract

1 1/2 tsp ground cinnamon

1โ„2 tsp ground ginger

1โ„4 tsp ground nutmeg

pinch of cloves

flakey sea salt for finishing

INSTRUCTIONS

1 - Heat the oven to 350ยฐF and line two baking sheets with parchment paper.

2 - In a large bowl, whisk together the yellow cake mix, Fancy Monkey Salted Caramel mix and the
spices until evenly blended with no streaks.

3 -Add the eggs, oil and vanilla and stir with a sturdy spatula into a thick, soft dough.

4 -Using a 2 oz cookie scoop (about 3 tablespoons, or 13โ„4 oz of dough), portion the dough and roll into
balls. They spread so space them apart about 2 inches on the baking sheet

5 -Bake for 12 minutes, rotate half way though.

6 -Cookies should be still very soft in the interior when you take them out and set around the sides. Let cool. Keeps for a couple days well wrapped.

TIPS

A few flakes of salt on top make the caramel pop.
