- 2¼ cups Cold whole milk
- ¼ cup Fresh lemon juice (about 2 lemons)
- 3 Tbsp Granulated sugar
- 2 Tbsp Unsalted butter, melted
- 1 Lemon, zested
- Pinch Fine sea salt
INSTRUCTIONS

Add the Fancy Monkey Lemon Pudding Mix and sugar to a large bowl. Pour in the cold milk and lemon juice and whisk for 2 minutes until completely smooth and thickened. - Emulsify
Whisk in the melted butter until the curd is glossy and fully combined. - Season and finish
Stir in the lemon zest and a pinch of salt. Taste — add a little more lemon juice if you want it brighter. It’s ready immediately but thickens further in the fridge.
