No-Bake Salted Caramel Yogurt Cheesecake

A no-bake cheesecake with no oven and no cream cheese — salted caramel pudding mix and Greek yogurt set into a tangy, high-protein layer.

This no-bake cheesecake skips the oven and the cream cheese entirely — salted caramel pudding mix whisked into cold milk, folded with Greek yogurt, sets overnight into a tangy, high-protein cheesecake layered with Biscoff.

INGREDIENTS

  • 1 package Fancy Monkey Salted Caramel Pudding Mix
  • 2 cups Cold whole milk
  • 1 cup Full-fat Greek yogurt
  • 12–15 Biscoff cookies, plus more for garnish
  • Fresh berries, for serving
  • Honey, for drizzling

INSTRUCTIONS

  1. Make the pudding
Add the Fancy Monkey Salted Caramel Pudding Mix to a large bowl. Whisk the cold milk into the powder for about 2 minutes until smooth and thickened. Let stand 2 minutes.
  2. Fold in yogurt
Add the Greek yogurt and fold gently until the mixture is smooth, creamy, and evenly combined. Don’t stir aggressively — fold to keep it light.
  3. Layer
Spread half the mixture into a shallow dish or divide among individual cups. Press a single layer of Biscoff cookies into the surface, covering it completely.
  4. Top and chill
Spoon the remaining mixture over the cookies and smooth the top. Press plastic wrap directly onto the surface so it doesn’t dry out. Refrigerate overnight — at least 8 hours. This is non-negotiable: the cookies need the full time to soften into that crust texture.
  5. Serve
Top with fresh berries, a drizzle of honey, and a few crushed Biscoff cookies. Scoop through all the layers so every bite has everything.

TIPS

Full-fat Greek yogurt only — low-fat won’t give you the same rich, thick result. Serve in individual glasses with a cookie layer in the middle for a more elegant presentation. This keeps in the fridge for up to 3 days, and the cookies actually get better as they soften more each day. The same technique works with other Fancy Monkey flavors — swap the pudding mix and reach for Simple Mills chocolate or vanilla almond flour cookies for a cleaner, just-as-delicious variation.

FAQ

Whisk salted caramel pudding mix into cold milk, fold in Greek yogurt, and chill overnight — the yogurt sets into a tangy, sliceable cheesecake with no cream cheese and no oven.

How long does no-bake cheesecake need to set?

At least 6 hours, ideally overnight, so it sets firm enough to slice.

Can you freeze no-bake cheesecake?

Yes — freeze it up to 1 month; thaw in the fridge before serving for the best texture.

Is it high protein?

Yes — built on Greek yogurt instead of cream cheese, it’s noticeably higher in protein than classic cheesecake.
