London Fog Pudding
London Fog Pudding
Our Vanilla instant pudding and dessert mix, made with real ground vanilla bean, is the perfect soft backdrop for bergamot and lavender. Simmer the tea right into the milk, chill it, and whisk. It's basically a London Fog latte you eat with a spoon. Very proper. Slightly cheeky.
Variations & riffs: any tea you love works here. Steep it the same way and pick the flavor that plays nicest with it.
Lady Grey Lemon: Earl Grey (or Lady Grey) with our Lemon mix. Bright, citrusy, and very garden party.
Chocolate Fog: Earl Grey with Chocolate. Bergamot and cocoa are old friends.
Chai Caramel: Masala chai with Salted Caramel. Cozy, spiced, and a little bit dangerous.
Rooibos Vanilla: Caffeine-free rooibos with Vanilla, for an after-dinner cup.
Jasmine Cloud: Jasmine green tea with Vanilla. Delicate and floral, no lavender needed.
SERVINGS
2 teacupsACTIVE TIME
10 minutesFULL TIME
About 1½ hours (mostly chilling)INGREDIENTS
1 pouch Vanilla Fancy Monkey
2 cups (16 fl oz) milk, dairy or plant
1 good-quality Earl Grey tea bag
A pinch of dried culinary lavender, for dusting (optional)
INSTRUCTIONS
1. Put the milk and tea bag in a small saucepan and bring it up to a simmer over medium heat.
2. Take the pan off the heat and let the tea steep for 5 minutes. Lift out the tea bag.
3. Pour the tea milk into a jar and chill until completely cold, about 1 hour (or set it in an ice bath to speed things up). It has to be fully cold or the pudding won't set.
4. Pour the cold tea milk into a bowl, add the pouch of Vanilla, and whisk for about 2 minutes, until smooth and starting to thicken.
5. Spoon into teacups and chill for at least 30 minutes.
6. Just before serving, if you like, rub a tiny pinch of lavender between your fingers and let it fall over the top. Pinkies up.
TIPS
Go easy on the lavender. A little reads as floral; too much tastes like soap.
Any milk works, dairy or plant. Using oat milk? Bump it to 2¼ cups (18 fl oz), since oat milk sets thicker.
Serve on a saucer with a shortbread cookie for full tea-time energy.
