INGREDIENTS

  • 1 cup Unsalted butter, softened
  • ½ cup Powdered sugar
  • 5 Tbsp Fancy Monkey Lemon Pudding Mix
  • 2 cups Cake flour
  • 1 Tbsp Whole milk
  • ½ tsp Fine sea salt

INSTRUCTIONS

  1. Preheat
    Preheat oven to 325°F. Line a baking sheet with parchment paper.
  2. Cream butter and sugar
    Beat butter and powdered sugar together until smooth and pale, about 2 minutes.
  3. Add pudding mix
    Add the Fancy Monkey Lemon Pudding Mix and mix until fully incorporated.
  4. Add flour and milk
    Stir in cake flour, milk, and salt just until a soft dough forms. Do not overmix — shortbread gets tough if worked too hard. Stop as soon as the dough comes together.
  5. Shape and score
    Divide dough into 16 equal portions and place on the prepared baking sheet. Gently flatten each cookie and score the top with a fork.
