  • ยฝ cup (1 stick) Unsalted butter, melted and slightly cooled
  • 1ยฝ cups Granulated sugar
  • 3 large Eggs
  • 1 Tbsp Fine cornmeal
  • 1 Tbsp White wine vinegar
  • 1 tsp Vanilla extract
  • ยผ tsp Fine sea salt

INSTRUCTIONS

  1. Preheat
    Preheat oven to 350ยฐF. Line an 8x8-inch baking pan with parchment paper, leaving an overhang on the sides for easy lifting.
  2. Make the crust
    In a bowl, combine flour, powdered sugar, and salt. Work in the cold butter with your fingers or a pastry cutter until the mixture resembles coarse crumbs. Press evenly into the bottom of the prepared pan. Bake 15 minutes, until just set and lightly golden at the edges.
